Approach:

In a large bowl, mix together pork, fish sauce, sugar, pepper, salt, shallots, possibly mushrooms and mix well. Cover and set aside.
Cut the melons into 2 to 2.5 cm pieces. Using a spoon, remove the marrow and seeds

Add peeled shallots to water / broth and bring to the boil. Meanwhile, stuff the pork mixture into the melons. When the broth boils, add the melons, turn down the heat and simmer under the lid for about 10 – 15 minutes. Season with a little salt to taste. Serve in the soup plate and garnish with chopped spring onions. If desired, you can add 0.5 teaspoons of sesame oil for the sake of taste.
Serve with jasmine rice.
