Simple soup that tastes very good. Family friendly soup that allows for variations in ingredients. We used red lenses, but and others can be used.
Red lentils cook tender and are not red as one would think after cooking.

Approach:
Use a large pot or preferably an iron pot. Heat the oil and add the onion, carrot and celery. Stir until the onion is soft. Then stir in the garlic, bay leaf, basil and oregano. Let it simmer for 2 minutes.
Stir in lentils, add water and tomatoes. Let it simmer on low heat for almost an hour. If it gets too thick, you can add a little more water.
Before serving, stir in the spinach, wait a few minutes and then season with vinegar, salt and pepper.
Here you can vary with other vegetables.
