Approach:
Saute finely chopped garlic and chili in olive oil.
Add canned tomatoes, sugar and bay leaves, and cook on low heat for 20 minutes, until thickened.
Cut bacon and chorizo sausage into small cubes and the clipfish into pieces of approx. 2 cm. Roughly chop onions and cut peppers into pieces.
Saute bacon and chorizo sausage in a frying pan for a few minutes. Add onions, peppers and stockfish and sauté for 3-4 minutes. Add olive oil if necessary.
Add the mixture to the tomato sauce together with the fish stock. Bring to the boil and simmer the soup for 1-2 minutes.
Season with pepper, salt and possibly chili powder if you want more flavor. Serve the soup piping hot with bread and aïoli.
Tips:
The tomato sauce can be strained or run with a hand mixer to get a smoother soup.
