Approach:
Divide the chicken into 3-4 cm long pieces with bones. Boil water and add garlic, galanga root and lemongrass cut at an angle for approx. 1 cm long pieces. Add salt and lime juice. Add the chicken pieces and sliced shallots. Bring to the boil and let the soup steep for approx. 5-10 minutes.
Garnish the soup with coriander, chili, a lime boat and finely shredded lime leaves. Rice is an accessory and is eaten from the plate. Taste with fish sauce if necessary.
